For centuries we have been brewing our coffee with dirty, over roasted beans. These ancient roasting methods use large, dirty, rotating cast iron drums to circulate the beans. During rotation, the beans closest to the iron often get burnt and the beans on the inside don't get roasted enough. Meanwhile, many of the rotating beans become broken or even crushed. It's the residue or these broken beans that contaminate each and every batch of coffee beans that get roasted in the same dirty drum.<br />
